I use a combination of eating and cooking apples to provide the perfect balance of sweetness, I cook them down with brown sugar, vanilla, lemon zest, cinnamon and a hint of ginger before covering with a golden sugary crumb. I also add oats into the crumble mix to provide a bit of goodness to this dessert!!
