Brazilian style fish stew with rice
A Brazilian-inspired fish casserole with creamy coconut sauce and plenty of sunshine spice!
Health benefits: The base of this dish is coconut oil; coconuts are in vogue right now and for good reason! As we come to realise that fat is not the enemy we are eating more and more foods such as coconut oil which is high in the ‘good’ kind of saturated fat. Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. As well as being packed with nutrient dense vegetables the white fish in this stew is an excellent source of lean protein which helps keep you fuller for longer.
