Chicken and bacon pot pie with mashed potato topping (GF)
Description: Are you Celiac or gluten-intolerant? There’s no reason why you should miss out on this comforting chicken pot pie. I’ve simply replaced the puff pastry with creamy mashed potato and omitted the flour from the gravy and the stock I use doesn’t contain gluten, so you can still enjoy succulent chicken thighs in a delicious chicken gravy flavoured with smoky bacon, aromatic thyme, peas and mushrooms.
Ingredients: chicken thighs, streaky bacon, mushrooms, peas, garlic, chicken stock (celery), potato (butter, milk)
