Jerk Chicken with Coconut Rice
Lamenting the fact that instead of Jamaica we are off to a Butlin’s ‘Just for Tots’ holiday this year I’ve added this sunshine dish to the menu! As with all Mama’s Meals the spice isn’t too hot; I use mild curry powder and a host of other spices to give this dish a punch without blowing your head off, (spicy food can affect the flavour of your breastmilk). The sweetness of the coconut rice balances the gentle heat of the chicken perfectly. Eat and pretend you’re on a beach in the Caribbean – I can almost hear the waves!
Health benefits: Ginger is among the healthiest (and most delicious) spices on the planet. It is loaded with nutrients and bioactive compounds that have powerful benefits for your body and brain. As well as being great for your digestive system it can help ease nausea, (although hopefully you’re over the morning sickness by now!) and along with garlic can help to boost the immune system – you may find that you’re more prone to coughs and colds now and so eating foods containing garlic and ginger may help to prevent them becoming too severe. Chillies boost your metabolism – no bad thing after having a baby! And the chicken in this meal provides a fantastic source of lean protein to give you energy and keep you feeling fuller for longer.
