I absolutely love the simplicity of this fish dish; it’s so healthy and light and simply bursting with delicious Mediterranean flavours. The merits of a Mediterranean diet are well publicised and this dish encompasses many of the elements which make it so healthy. This includes protein from the fish, healthy fats from the olives and a host of essential vitamins and minerals from the tomatoes. This is a humble dish that packs a huge nutritional punch!
