Description: A hearty and fragrant North African tagine bursting with sweet potato and chickpeas and adorned with sweet cranberries. I use chicken thighs instead of breast to keep the meat moist and tender. The addition of the sweet potato and chickpeas make this a complete meal and ups the vegetable content – another winner!!
Health benefits: Sweet potatoes have a low GI, (Glycaemic index) rating which along with the cinnamon prevent spikes in blood sugar helping you to avoid that post food slump; the last thing you need when you’re already feeling the effects of a broken night’s sleep! The chicken thighs provide a great source of protein which leaves you feeling fuller for longer, the same is true of the chickpeas which in addition to protein are a great source of fibre and essential vitamins and minerals, as is turmeric which contains vitamins B6 and C, fibre, potassium, magnesium and manganese.
