Sweet potato, lentil and bean one pot (GF)
Another favourite among my veggie and vegan friends. This dish is packed full of pulses and sweet potato and is mildly spiced making it the perfect easy meal. As with most of my veggie recipes it provides the full 5 of your 5 a day; healthy, filling and delicious – what more could you want? (You mean apart from a full nights’ sleep and a live in nanny?!)
Health benefits: Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid, and vitamin B6. Additionally, they are a good source of potassium, dietary fibre, niacin, vitamin B1, vitamin B2, and phosphorus. B vitamins are particularly important for breastfeeding mamas and the manganese is an essential co-element in energy production. The lentils and the beans in this dish provide a protein hit to keep you feeling full and provide an energy boost.
