I absolutely love paella and simply had to include a vegetarian version for non-meat eaters. It’s the smoked paprika that gives it that authentic Spanish taste and the creamy paella rice makes it an extremely satisfying and tasty dish.
Health benefits: The range of veggies in this dish provide a great source of slow release carbohydrates to give you energy, the tomatoes in particular provide essential vitamins and minerals. The chickpeas are an excellent source of protein and fibre and are low GI so stabilise blood sugars as well as providing the mineral manganese which is used in energy production.
