Vegetarian shepherd’s pie with sweet potato mash
No sheep were harmed in the making of this pie! I simply had to include this British classic within my vegetarian selection. I use a combination of onion, carrot, tomatoes and lentils simmered in stock and fragrant thyme and top the whole affair with sweet potato and veggie cheese. As it notches up the full 5 of your 5 a day you simply can’t get a healthier or tastier dish!!
The lentils are a great source of protein helping you feel fuller for longer, the sweet potato has a low GI, (Glycaemic index) rating which prevent spikes in blood sugar helping you to avoid that post food slump; the last thing you need when you’re already feeling the effects of a broken night’s sleep! The veggie cheese is a good source of calcium and the vegetables provide complex carbohydrates which will ensure that you have a steady supply of energy.
Ingredients: olive oil, onion, carrot, thyme, tomato, vegetable stock cube, (celery – may contain traces of egg, mustard and soy), green lentils, sweet potato, butter (milk), vegetarian cheddar cheese, (milk)
